The most popular recipe on my blog has been Crockpot Chicken Tacos for four years running. It's no surprise why when you consider the steps to make it:

1) Add six chicken breasts, one packet of taco seasoning and one jar of salsa into a crockpot and stir to combine.
2) Turn on crockpot for 4-6 hours.
3) Shred with a fork or a hand mixer. Serve.

It makes more chicken than you would've possibly thought you could get out of six chicken breasts, so once you've had your taco fix, you can use the leftovers for soup, quesadillas, salads, crunchwraps, etc.

Super Bowl Sunday calls for delicious food that feeds a crowd. Assuming your crowd isn't full of vegetarians, one batch of crockpot chicken tacos lends itself perfectly to THREE crowd-pleasing variations using the chicken. The first of those is just your standard taco bar with all the fixin's. I usually do this by setting out the chicken and tortillas alongside bowls of sour cream, cheese, tomatoes, avocado/guacamole and salsa. Any variation is good. The more bowls the better.

The second option is what I'll cover in this post -- taquitos! It's hard to beat traditional fried taquitos, but with all the greasy food choices for the Super Bowl, I figured it might be best to give you a baked taquitos recipe. Guilt-free taquito eating to your heart's delight! Also, the next recipe I'm sharing isn't remotely guilt-free, so really I'm really just aiming for balance.

You can serve the taquitos with sour cream, ranch, and/or salsa on the side for dipping. Any of the southwestern/chipotle ranch options are especially good for these. You will need to use the smaller tortillas because otherwise you'll just have very long, awkward taquitos that require double-dipping, and nobody wants that. The pictures show the batch I made using the Mission brand "Super Soft" tortillas because that's what I had on hand, but I'd recommend using just the normal thickness so that they crisp up a bit more.

Check back later today for the next post for chicken nachos!

Enjoy!

Baked Chicken Taquitos
Makes 10 Small Taquitos

1 cup chicken from Crockpot Chicken Tacos *
1/2 cup shredded cheddar cheese
10 small flour tortillas

Directions

  1. Preheat oven to 425 degrees.
  2. Line a baking sheet with foil and spray with cooking spray.
  3. Stir cheese and chicken together in a bowl.
  4. Set out tortillas, and place a few tablespoons of the mixture in a line on the left 1/3 of the tortilla, leaving about an inch on the ends so the mixture doesn't melt out in the oven.
  5. Roll up the tortilla very tightly, and place seam side down onto the baking sheet.
  6. Repeat with remaining mixture and tortillas, placing tortillas at least an inch apart on the sheet.
  7. Spray the top of each tortilla with cooking spray or brush with oil.
  8. Place pan in the oven and cook for 15-20 minutes, or until edges are starting to turn golden brown.
  9. Serve immediately with sour cream, ranch and/or salsa.

You know those times when you're lying awake at night thinking about something? Maybe you're thinking about something stressful happening the next day. Maybe it's thinking ahead to the weekend. Maybe you're putting together a mental to-do list (that's my usual). Well, the other night, this recipe was keeping me awake. I know most people don't think about buffalo chicken at 1am, but we've established I'm not normal.

Here was my thought process: the most popular recipe on my blog (crockpot chicken tacos) is such a hit because it's delicious and incredibly easy. The ingredients are chicken, a jar of salsa, and a packet of taco seasoning. The readers, being fantastic as you always are, have commented dozens of ways to make this recipe even better. One of these is adding a block of cream cheese at the end. My favorite dip recipe is this buffalo chicken dip. It knocks the socks off of every other buffalo chicken dip recipe out there. The ingredients are canned chicken, dry ranch, buffalo sauce, cream cheese and cheddar. So, since the powder to liquid ratios are all the same, I saw no reason that I couldn't make easy crockpot buffalo chicken. The raw chicken goes in with buffalo sauce and dry ranch for 4-6 hours and right before it's done you add in a block of cream cheese and stir in some sharp cheddar.

See? It's the kind of thing that will keep you up at night. I can only make crockpot recipes over the weekend because of work, so fast forward two weeks and I'm finally able to give this recipe a try. It was amazing. The creamy cheese flavor mixed with the tangy and slightly spicy buffalo sauce kick...perfect.

I put the chicken into rolls and made little sliders. I tried using the take and bake rolls from the grocery store and King's Hawaiian slider rolls. I couldn't pick a favorite because I liked them both. I think it'd be good made into quesadillas as well. The key is to make sure it's hot and the rolls are heated too. Just like lukewarm dip isn't ideal, neither is lukewarm crockpot buffalo chicken.

Enjoy!

Crockpot Shredded Buffalo Chicken
Makes 15+ Sliders

3 Boneless, Skinless Chicken Breasts (this is what I used)
8oz Buffalo Sauce*
1oz Package Dry Ranch Mix
4-6oz Cream Cheese*
2 cups Shredded Sharp Cheddar Cheese

Add first three ingredients to crockpot and toss to coat. Cook on high for 4 hours or low for 6 hours. 10 minutes before you are finished, shred chicken with two forks. Chicken should shred easily and this will incorporate the extra sauce into the chicken. You will think you have too much sauce before you do this, but as you shred it you'll notice the sauce begins to coat the chicken instead of sitting at the bottom of the pot. There should be no large pieces of chicken left.
Add in block of cream cheese and stir to melt. Add in sharp cheddar cheese and stir gently. Serve hot. Make sure the slider rolls are also hot.
If you are bringing them to a tailgate or something of that sort I'd suggest making the chicken and pre-assembling the sliders in a 13x9 pan. Cover the pan with foil and heat at 375 degrees until rolls are warmed as well.  Store leftovers in fridge or freeze to enjoy at a later date!

*You can adjust these up or down depending on how spicy or creamy you want the chicken.

I can think of few things better than the smell of something cooking in the crockpot all day. Crockpot Chicken Tacos are by far the most popular recipe on my blog. Besides the fact that they're delicious, there's something to be said for a recipe that only uses three ingredients yet feeds 12. That goes for most crockpot recipes. They're usually pretty straight-forward and feed a crowd. So, you can imagine how excited I get when I find another great crockpot recipe. This is one of those. I may like it even better than the Crockpot Chicken Tacos because it is THAT good.

Of course I used North Carolina BBQ sauce (Sticky Fingers). I know there are various regional preferences, but this seemed like a given to me. Disclaimer: this is not the vinegar vs. tomato vs. mustard pork BBQ sauce debate. Obviously vinegar-based is where my heart lies on that one. This BBQ sauce is the thicker red sauce that is made for BBQ chicken. I used Sam Adams Summer Ale for the beer portion since I'm a big Sam Adams fan, and I wanted the rest of the six pack for myself.

The chicken is incredibly flavorful and rich with the sauce. I served it in warm kaiser rolls and popped a piece of cheese on top. I'm not big on slaw, but I imagine that would be good for those slaw lovers out there. I added sweet potato fries as a side because...well they're sweet potato fries. Does that even need an explanation?

I really can't imagine anyone not loving this recipe. It will absolutely be one of my new go-to recipes for summer cookouts. It also makes a giant serving so I was eating BBQ beer chicken sandwiches for my lunch for multiple days in a row. Despite eating this for multiple meals within the course of four days, I was still upset when I ate the last serving.

Enjoy!

3-Ingredient Crockpot Chicken Tacos

I'll keep this short and sweet: this is one of my all time favorite recipes. If there is one crockpot recipe you need in your repertoire, this is it. But truthfully, after making it once you won't even need the recipe because it's just so darn easy.

Three ingredients and almost zero work. The result is a juicy, flavorful shredded chicken that makes some killer tacos. I like to load up my tacos, so they look a bit messy in the pictures. They were like that in real life, too. Messy and delicious. I've been told before I have a knack for ordering the messiest foods on any menu. Why? Because the messiest foods are the best foods. It's a fact.

You can easily put together a great tortilla soup with the leftovers from the chicken. I've included the recipe at the bottom of this post. If you read through the comments you'll also see a number of great reader suggestions for ways to adapt the recipe. My favorite twist is to add a block of cream cheese about 15 minutes before the chicken is served. I didn't think this recipe could get any better until I made them and tried this out. Amazing. I've also seen that adding a can of cream of mushroom soup when you throw in the ingredients is delicious. I'll be trying that next time!

**As a side note, I am SO grateful to everyone who has made this recipe and/or commented on the post. I may not be able to respond to all of the comments, but I read every one, and I absolutely love them! I can't tell you how happy it makes me that people are enjoying the recipe so much. Thank you, thank you, thank you!

Crockpot Chicken Tacos
Recipe from Tasty Kitchen

Serves: ~12 people

1 1oz Envelope Taco Seasoning*
6 Boneless, Skinless Chicken Breasts, thawed
1 16oz jar Salsa*

Dump all ingredients into a crockpot and give it a little stir to blend the seasoning with the salsa. You do not need to add any water to the taco seasoning. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork.

For tacos, serve the chicken with soft flour tortillas, guacamole, lettuce, shredded cheese and/or sour cream. This is very versatile and can be used for enchiladas, nachos, tostadas, quesadillas, etc. Any leftover chicken can then be used for tortilla soup (make it the next day or freeze the chicken to use at a later time).

When I don't want quite as much food I cut the recipe in half. You don't have to get too exact about the measurements. I use three or four chicken breasts--whatever comes in the smaller package at the grocery store--and use between half and 3/4 of the amount of salsa and taco seasoning called for in the full recipe. The only result of using too much salsa for the amount of chicken you use is that it will have more liquid when it's done. The flavor will be the same. Pour out a little of the liquid when the chicken is cooked and you're good to go!

*I use Old El Paso Reduced Sodium for the seasoning. For the salsa I switch between brands, but Newman's Own and Pace are my favorites. Trader Joe's Mango Salsa and other kinds with mango and peach flavors are delicious in this recipe as well.  If you want to avoid using processed ingredients you can make this recipe using homemade salsa and homemade taco seasoning and achieve the same results with the added bonus of skipping out on the preservatives and such in pre-packaged ingredients.
